Morello Cherries Flambée

Ingredients
- 1 tbsp (15 ml) butter
- 1 – 14 oz (398ml) jar of Bing cherries or Morello cherries, drained
- 1 tbsp (15 ml) sugar
- 2 tbsp (30 ml) dark rum
- Vanilla Ice Cream
Method
- Melt the butter in a skillet. Brown the cherries and sugar in the butter over high heat for 2 minutes.
- Add the rum and let it flare immediately.
- Let reduce for 1 minute.
- Serve hot over the ice cream.
Note
There is always a jar of Bing cherries stored in the pantry. This permits me to make this dessert whenever friends drop in unexpectedly.
