4 Hour Pork Roast with Milk

Ingredients 

  • 1 (3 lb/1,5kg) shoulder pork roast without bone
  • 2 Tbsp (30 ml) butter
  • 4 cups (1 litre) milk
  • 4 garlic cloves
  • 2 onions, peeled
  • 1 leek, white section only
  • 1/4 tsp (1 ml) ground nutmeg
  • Salt and pepper

Method

  1. Place rack in centre of oven.  Pre-heat oven to 350 °F(180 °C).
  2. In a large oven casserole, brown the pork roast in butter.  Add milk.  Bring to boil.  Add vegetables and nutmeg.  Season with salt and pepper.  Cover and cook in oven for 2 ½ hours
  3. Uncover and continue cooking approximately 1 ½ hours or until sauce is reduced by half.  Turn pork over every 20 minutes.
  4. Remove pork roast from casserole and set aside.  Pour liquid through sieve.  Whisk sauce and season to taste.
