Jerk Salmon Skewers

Yield: 4 servings.

Ingredients

  • Jerk Rub
    • 1 bunch thyme
    • ½ bunch green onion, chopped
    • 1 clove garlic, optional
    • 1 tbsp. roughly chopped fresh ginger
    • Juice of 2 limes
    • Zest of 1 lime
    • 1 scotch bonnet, stemmed
    • ¾ tsp. ground allspice
    • 2 tbsp. grapeseed oil
    • Coarse salt and freshly cracked black pepper, to taste
  • Salmon
    • One 12-ounce piece of salmon fillet
    • Vegetable oil, for grill
    • Coarse salt and freshly cracked pepper, to taste
    • Wooden skewers
    • Lime wedges, for garnish (optional)

Method

  1. Jerk Rub
  2. Put all the ingredients in a food processor. Puree until smooth.
  3. Salmon
  4. Soak wooden skewers in water for 1 hour to prevent from burning on grill.
  5. Cut salmon into 1 1/2-inch cubes. Transfer 2 to 3 pieces evenly onto each skewer.
  6. Brush jerk rub onto salmon skewers.
  7. Clean grill. Preheat barbecue on high. Brush grill well with oil.
  8. Grill salmon until golden brown, firm to touch and just cooked through, about 3 to 5 minutes per side.
