Jerk Salmon Skewers
Yield: 4 servings.
Ingredients
- Jerk Rub
- 1 bunch thyme
- ½ bunch green onion, chopped
- 1 clove garlic, optional
- 1 tbsp. roughly chopped fresh ginger
- Juice of 2 limes
- Zest of 1 lime
- 1 scotch bonnet, stemmed
- ¾ tsp. ground allspice
- 2 tbsp. grapeseed oil
- Coarse salt and freshly cracked black pepper, to taste
- Salmon
- One 12-ounce piece of salmon fillet
- Vegetable oil, for grill
- Coarse salt and freshly cracked pepper, to taste
- Wooden skewers
- Lime wedges, for garnish (optional)
Method
- Jerk Rub
- Put all the ingredients in a food processor. Puree until smooth.
- Salmon
- Soak wooden skewers in water for 1 hour to prevent from burning on grill.
- Cut salmon into 1 1/2-inch cubes. Transfer 2 to 3 pieces evenly onto each skewer.
- Brush jerk rub onto salmon skewers.
- Clean grill. Preheat barbecue on high. Brush grill well with oil.
- Grill salmon until golden brown, firm to touch and just cooked through, about 3 to 5 minutes per side.
