Coconut Prawns on skewers
Ingredients:
- 2 Eggs
- Coconut
- Prawns
Method:
- Clean and de-vein the prawns
- Dip the prawns in the eggs and then immediately into the coconut
- Deep fry the prawns until the coconut becomes lightly browned and crispy
- Drain the excess oil from the prawns on some kitchen towel
- Serve the prawns on skewers with fresh slices of lemons
