Teriyaki Marinade
Ingredients:
- 4 tbsp soy sauce
- 2 tbsp vinegar
- 2 garlic cloves, finely chopped
- 1 tbsp fish sauce
- 1 tbsp water
- 1 tbsp sunflower oil
Method:
- Blend and use as a marinade for pork or chicken
Sumac Rub
Ingredients:
- 1 lemon, zest only
- 1 orange, zest only
- 2 tbsp parsley, chopped
- 2 garlic cloves, chopped
- 2 tsp sumac
Method:
- Blend in a pestle and mortar and use as a rub for fish and chicken
Watercress Marinade
Ingredients:
- 30g watercress
- 200g natural yogurt
- 1 lemon, zest only
- Mint, optional
- Salt and freshly ground black pepper
Method:
- Place all the ingredients into a food processor and blend until smooth.
- Season with salt and freshly ground pepper.
